FAQs

What is the best alcohol for fruit cake? ›

What alcohol should you use? Strong, flavourful spirits with a high ABV are ideal for feeding fruitcakes. You can use rum, brandy or whisky for spice, or if you like citrus flavours, try an orange liqueur. Cherry brandy and amaretto will also work well if you prefer these.

How to keep fruitcake moist? ›

We recommend wrapping your fruitcake in plastic wrap before placing it in an airtight container. Then, place that container in the fridge. Doing this can ensure your fruitcake stays fresh for up to two months.

What is best to soak fruitcake? ›

Soaking liquid & non-alcoholic option

If you can't find spiced rum, you can also use dark rum, cognac, brandy or sherry to soak your fruits. If you don't consume alcohol, you can replace the rum with a blend of your favorite fruit juices. My favorite is apple and orange juice (1 cup each).

Why is my fruitcake dry and crumbly? ›

Cakes crumble because they've dried out too much. From years of baking, I know that dry cakes happen for one of two reasons; using too much of your dry ingredients or over-baking your cake.

How long should fruitcake be aged? ›

Like Fine Wine, Fruitcake Get Better With Time

The most common duration to properly age a fruitcake is about three months.

What can I use instead of brandy in fruitcake? ›

Whiskey serves as a great substitute for brandy in a fruitcake. Although whiskey comes from fermented grain mash while brandy is made from fermented grape mash, the process is so similar, that the flavor will be similar as well.

What ingredient in fruitcake makes it last so long? ›

The trifecta of sugar, low moisture ingredients and some high-proof spirits make fruitcakes some of the longest-lasting foods in the world.

Can a fruit cake be too moist? ›

If the cakes are too moist, remove them from the container and all wrapping. Allow them to stand at room temperature for 24 hours, then rewrap in plastic wrap and freeze. Do not continue seasoning. Dark cakes usually take 4 to 6 weeks to season; light cakes usually take 3 to 4 weeks to season.

Why do you soak fruitcake in alcohol? ›

Alcohol serves as a preservative

Almost any recipe that calls for soaking fruits for a long period of time, that is several days, weeks, or months, will use some sort of liquor to soak the fruits.

How often do you baste fruitcake? ›

Baste or spritz top with brandy and allow to cool completely before turning out from pan. When cake is completely cooled, seal in a tight sealing, food safe container. Every 2 to 3 days, feel the cake and if dry, spritz with brandy. The cake's flavor will enhance considerably over the next two weeks.

How do you revive a dry fruitcake? ›

A simple syrup, preferably one flavored with cognac or brandy, will work wonders on dry cake. If the cake is hard, you're probably best off turning it upside down in the pan and using a wooden skewer to poke holes in it, then brushing on the syrup and letting it soak in.

Why is my fruit cake soggy? ›

Adjusting the cooking time and temperature

If your cake has a soggy middle, the first thing to try is bringing the temperature down a little and baking for slightly longer. I'd suggest reducing the temperature by 20 degrees and increasing the baking time for 7 minutes.

Why did my fruitcake crack on top? ›

In an oven that's too hot, the outside of the cake cooks at a much faster rate than the inside. A crust forms early on, but as the inside of the cake continues to cook and rise, this crack crusts. You might experience the same problem if the cake recipe has too much leavener or if you've used a pan that's too small.

What kind of alcohol do you use for cakes? ›

For example, rum and bourbon give off nutty and vanilla tasting notes that work well with pie filling, cake mix and cookie dough (much like a vanilla extract). Red wine, port and brandy, on the other hand, add a sweetness that pairs nicely with glazes, chocolate cake and gingerbread.

How do you moisten dry fruit cake with alcohol? ›

To fix your dry problem, poke holes into the cake with a wooden skewer and brush some brandy or port on top. If you are so inclined, make a simple syrup as well and brush both on the cake.

What alcohol is best for fruits? ›

A neutral alcohol like vodka is your safest bet when it comes to DIY infused booze because there are no flavors inherent to the spirit that will clash with your fruit.

What alcohol is used to preserve cake? ›

A good cake does not need preservative as it is not meant to stay for ever. However, some wedding cakes that are fruit based or fruit cakes in general tend to stay longer than normal because of the fact that the dried fruits used are soaked in rum, brandy or the likes.
